Fry Sweet Corn

Sweet corn has a natural sweet, fresh flavor that goes well with chicken, fish or beef. Corn can be boiled, put into a chowder or eaten right off the cob. For a good country flavor try frying up some sweet corn with just a few tasty ingredients. You will have a fresh side dish that you can prepare in just a few minutes and serve up hot. Besides a side dish, you can sprinkle fried corn on salads and on delicious cream based soups. Add this to my Recipe Box.

Instructions

1. Mix the sweet corn kernels and the buttermilk together in a glass bowl. Spoon the buttermilk over the kernels and let it sit covered for thirty minutes. After the corn has soaked, drain the milk out of the bowl.

2. Dump the flour, the cornmeal salt and pepper into the storage bag. Shake the ingredients together. Use a slotted spoon to scoop the corn into the bag. After every spoonful is added, zip the bag and shake the corn. After all the corn is in the bag shake it all together.

3. Add an inch of corn oil to the Dutch Oven or heavy cast iron skillet. Heat the oil up on a medium heat. Carefully add the corn to the skillet a spoonful at a time. Fry the corn in two sections. It is better to fry a little at a time then overload the skillet. Cooking too much at once will make the corn mushy. Cook the corn about two minutes on each side, until it is crispy and brown.

4. Drain the corn on paper towels. Serve the corn golden and hot.
